It started out a pretty typical day: Wake up, potty the dog,
make coffee & do dishes (my beloved husband & I made potato skins for
dinner and he made snickerdoodles for
desert. Unfortunately the dishes didn't get done last night. Alas, as much as I
hate waking up to dirty dishes I'm not perfect.). When I went to actually make
up my cup of morning coffee I found we were out of rice milk. Being that I'm
allergic to milk I try to use dairy free options most of the time, but again
I'm not perfect and my allergy is not life threatening so I find I cheat way
more than I should, but usually not with my coffee.
So I add my stevia (not grown myself yet but instead still
store bought... someday) and think to myself... making rice milk can't be too
hard can it? I go look online and find out it can be really easy to make. I
happened to only have one cup of brown rice in the house, which is the perfect
amount... however I have yet to master the art of cooking brown rice. So I
search the internet again for a solution.

The rice came out pretty good. Still a bit harder than I would prefer (I'm going to say it could be the rice or operator error) but not to bad.
I found a recipe for Do-It-Yourself: Homemade Rice Milk and decided this is the one I want to try out. Where it called for 1 Tablespoon sweetener (or to taste; optional) I used stevia. The stevia didn't mix in all that well though. When I do this again I think I will leave the sweetener out and add only if needed for a recipe.
In honor of making my own rice milk I decided to have another cup of coffee and try it out... Yummy! I am so excited! I hope this means I will never be buying rice milk again.
This means we can take what we would be spending buying rice
milk and add it to the "saving for the future homestead" fund. It
might not be much but it brings me one step closer to making a dream into a
reality.
***Update***
My husband asked if I would try it with sugar as the sweetener
and more rice to make it thicker. He talked me into 2 cups of rice. Bad idea
(at least with my blender). It came out chunky no matter what I did. I might
try adding more rice next time but not a whole cup! The sugar, however, worked well.
I love the idea of making my own rice milk. Please let me know when you come up with the thickness you think it should be... as I am anxious to try it! Love ya,

Yea, thats going to be trial and error for a bit until we get things in the proper proportions... Still, it's some VERY yummy stuff.
